>Lady Fingers


Lady Fingers are as dainty as they sound. I love having tea parties, no there not just for little kids. Lady fingers are great with a cup of tea because they absorbed flavours and juices so easily, its like a little sponge.

This recipe is in grams and I’m really not good at converting it to cups,well it doesn’t convert exactly to cups I tried. So just convert the grams into ounces here and then weigh the ingredients on food scale it’s the best way.
Lady Finger:
3 egg yolks
75 grams sugar
3 egg whites
50 grams powdered sugar, sifted
75 grams unbleached all purpose flour

In the bowl of an electric mixer, whip the egg yolks and the granulated sugar until they become very thick and pale (ribbon stage).
Whip the egg whites fully and slowly add the sifted powdered sugar in a separate bowl. Keep whipping until you have a pretty stiff meringue. Fold the yolks into the meringue and finally fold the flour in.

Pipe the ladyfingers onto a sheet pan lined with parchment paper. Sift powdered sugar on top and bake at 375 degrees for about 10 minutes. Let them cool.
